Here is a very simple and fast recipe, proposed by Annie L., regular customer of our boutique in Cannes. List of ingredients for 3 persons: In your shop Perrin: - 1 jar of preserved lemon marinated in extra virgin olive oil - 1 bottle of olive oil Taggiasca - 1 pot of pitted olives Taggiasca At the butcher's: -600g of thinly-sliced fillet of chicken At the market: - 1 yellow onion
1/ Brown the onion, previously chiselled, in 3 tablespoons of Taggiasca olive oil.
2 / Add the chicken fillets and brown on high heat.
3 / Add 1 tablespoon of water, 3 tablespoons of pitted olives Taggiasca and lower the fire.
4 / Cover and simmer over very low heat.
5 / Meanwhile, cut 3 quarters of lemon confit into small pieces, taking care not to separate the pulp from the bark.
6 / Add at the end of cooking; remove the cover and let reduce.
7 / Serve and accompany with fresh pasta.
